Bruschetta is a starter, hails from Italy and is one of the most cherished dishes across the world. Now, what makes this dish a star? it's variations and for being loved in everyone recipe. Bruschetta mainly is a dish consisting of a base which has to be a perfectly baked and crusty Baguette (French bread) and a topping that could be anything you prefer.

I like my Bruschetta in a very different manner, I like it Creamy & Cheesy. The recipe for this is very simple and something that all of us could give it a try. Recipe: White sauce (Bechamel): Milk-250 ml Refined flour- 25 gms Butter (unsalted)- 25 gms Salt- to taste Black pepper powder- a pinch Onion (whole)- 1 no. Bay leaf- 1 no. Method: 1. To make Bechamel, you need to Boil milk in a pan, with onion and bay leaf (Just place them in the pot along with milk), Addition of bay leaf and onion makes it more flavorful, you may also add parsley stock etc. Let milk come to a roll boil.

2. Meanwhile milk is boiling, In a small bowl add flour and unsalted butter mix them well to a sticky dough, this is called Ala- minute Roux (roux is a thickener used in many sauces and curries).

3. As milk reaches to a roll boil, add the roux and keep whisking/stirring it to ensure milk is not burnt, you would notice as roux starts cooking in the milk it starts to thicken the milk, once you achieve the desired consistency, take the sauce off the flame and strain it immediately in a bowl with the help of a sieve.


4. In this stage, whisk in the salt, pepper powder and other desired aromats such as onion or garlic powder, dried oregano, pasta mix herbs etc. Topping: Mushroom/chicken boneless- 1 cup White sauce- 1 cup Chopped garlic- 2 gms Olive oil/Butter- 10 gms Dried oregano- 1 gm Chili flakes- 1 gm Salt- to taste Black pepper powder- 1 gm Fresh basil- 2 leafs Parsley- to ganish Cream- 20 gms Mozzarella cheese-30 gms Method: 1. Cut chicken into thin strips or cubes, similarly slice the mushroom and keep aside.


2. In a frying pan, add Butter/Olive oil to the pan, add chopped garlic, golden brown it. 3. Add basil leaf, saute it, add mushroom/ chicken to the pan, toss well. 4. Add seasoning, and white sauce to the pan, add cream for richness and better color. 5. Whisk in the cheese (only half). 6. Meanwhile slice the baguette diagonally and toast them in a frying pan/griddle.

7. Place the toasted bread in a serving dish atop the mushroom/chicken topping and garnish with cheese, dried oregano, chili flakes and parsley.
